As an adult Erin was diagnosed with wheat and dairy allergies so she spent much of her time baking vegan goods to satisfy her sweet tooth. After receiving compliments and requests from co-workers and family Erin realized other allergy suffers felt her pain, so she mixed up a recipe to keep the taste of homemade baked items that would be a treat for everyone.
In August of 2005, California native Erin McKenn quit her job as an assistant fashion editor to open Babycakes NYC. Now thanks to Babycakes NYC when you think of vegan cookies you imagine moist flavorful delights!
Babycakes NYC, a fully organic bakery on the Lower East Side, provides a place for people with allergies to experience the same home baked goodness that can be found at whole-food bakeries without the risk. So Babycakes NYC makes warm treats everyone can enjoy! Instead of using items that are among the list of common food allergies all Babycakes NYC products are free of gluten, dairy, sugar, wheat, eggs, soy, refined sugar and nuts. So what replaces these baking staples? The tummy-friendly hit list includes: Virgin cold pressed coconut oil, which promotes healthy thyroid and metabolic function; Agave Nectar, a fruit sugar, that absorbs slowly into the bloodstream and is suitable for diabetics because it is much lower on the glycemic index; date sugar consisting simply of dried ground dates with its vitamins and minerals, so it is easily broken down by the body since it is in its pure form; and Birch tree sweetener, a low glycemic sweetener extracted from the bark of birch trees which is said to fight tooth decay.
At Babycakes NYC you’ll find muffins, cupcakes, loaves, scones, crumb cakes, brownies, gingerbread, apple pie, cakes, cookies and cookie sandwiches made fresh each day.
